Vinification : Cold pre-fermentary maceration, with inert atmospheric conditions. Little pumping over. Rack and return. The wine is run off twice: once quickly, to create a fruity base, then another for a good balance on the palate. The two 'bases' are then put back together and aged as one.
Maturing : On the lees until spring in reduced conditions. Then extra oxygen is supplied in order to develop the structure of the wine. Bottling carried out at the optimum time for the fruit and the tannic balance on the palate.
Ageing potential : 4 years

Tasting notes : Opening with morello cherry, bitter chocolate and raspberry. The profile is young, nearly new wine. Then come dried fruit, fig, fresh hazelnut, and at the end some redcurrant. On the whole fresh, unctuous, all in delicateness, with a real persistency in the mouth.
Serving temperature : 16°
Best as : During the meal will accompany red tuna steak, pork colombo with aubergine.
